Calamari Salad
Serves 4
INGREDIENTS
1 lb. of cleaned Longfin squid
4 tsp. - garlic minced
2 tsp. – fresh parsley (a few pieces cut up) or dried parsley
¼ cup olive oil
Juice from 1 fresh lemon
¼ tsp. crushed red pepper
¼ tsp. salt
DIRECTIONS
Boil water, then add the squid.
Boil for 7 minutes.
Drain and cool squid with an ice bath.
Once cooled, cut squid in ½ inch rings.
Put all other ingredients in a bowl and mix together.
Add the squid with the ingredients and mix.
Ready to serve or refrigerate until cold (the longer you refrigerate the better the flavor as it marinates)
