Calamari Salad

Serves 4

INGREDIENTS

  • 1 lb. of cleaned Longfin squid

  • 4 tsp. - garlic minced

  • 2 tsp. – fresh parsley (a few pieces cut up) or dried parsley

 

  • ¼ cup olive oil

  • Juice from 1 fresh lemon

  • ¼ tsp. crushed red pepper

  • ¼ tsp. salt

 

DIRECTIONS

  • Boil water, then add the squid.

  • Boil for 7 minutes.

  • Drain and cool squid with an ice bath.

  • Once cooled, cut squid in ½ inch rings.

  • Put all other ingredients in a bowl and mix together.

  • Add the squid with the ingredients and mix.

  • Ready to serve or refrigerate until cold (the longer you refrigerate the better the flavor as it marinates)
